Ingredients
  

  • 6 Large Sweet Potatoes
  • 1/2 Cup Salted Butter
  • 1 Cup Brown Sugar
  • 1 Tsp Ground Cinnamon
  • 1 Tsp Vanilla Extract
  • 1/2 Cup Pecans

Instructions
 

  • Preheat your oven to 350 degrees Fahrenheit now. Peel all of your sweet potatoes very carefully. Slice them into rounds about half inch thick.
  • Grease your large baking dish with some butter. Place the potato slices inside the dish evenly. Layer them slightly to fit them all in.
  • Place your saucepan over medium heat on stove. Melt the butter and whisk in brown sugar. Add the cinnamon and vanilla to the mix.
  • Pour the hot sugar mixture over the potatoes. Ensure every slice is covered with the sweet glaze. This helps them cook evenly in the oven.
  • Cover the dish tightly with the aluminum foil. Place it in the center of the oven. Bake for about forty five minutes until soft.
  • Remove the foil and add pecans if using. Bake for another fifteen minutes without the cover. The sauce will become thick and very bubbly.

Notes

  • Slice the potatoes into even pieces for even cooking.
  • Use fresh sweet potatoes for the very best texture.
  • Do not skip the salt in the butter used.
  • Baste the potatoes with sauce halfway through the baking.
