Equipment

  • Cast iron skillet
  • Large mixing bowl
  • Whisk
  • Measuring cups
  • Measuring spoons
  • Small Microwave Bowl
  • Silicone spatula.
  • Oven mitts
  • Wire cooling rack
  • Toothpick

Ingredients

  • 1 cup ALL PURPOSE FLOUR
  • 1 cup YELLOW CORNMEAL
  • 1/2 cup GRANULATED SUGAR
  • 1 tbsp BAKING POWDER
  • 1 tsp FINE SEA SALT
  • 1/2 cup MELTED BUTTER
  • 2 large EGGS
  • 1 cup BUTTERMILM
  • 1 tbsp VEGETABLE OIL

Instructions

Step 1:

  • Preheat your oven to 400 degrees now. Let the oven get very hot first.

Step 2:

  • Place your skillet inside the warm oven. A hot skillet makes a better crust.

Step 3:

  • Whisk the flour and cornmeal together well. Use a large bowl for this step.

Step 4:

  • Add the sugar and baking powder now. Make sure they are mixed in fully.

Step 5:

  • Stir in the salt very gently now. Do not use too much force.

Step 6:

  • Whisk the eggs in a separate bowl. They should be very smooth and yellow.

Step 7:

  • Pour in the buttermilk and melted butter. Mix these wet items together slowly.

Step 8:

  • Combine the wet and dry ingredients together. Use a spatula for the mixing.

Step 9:

  • Do not overmix the batter at all. Stop when the flour is just gone.

Step 10:

  • Carefully remove the hot skillet from oven. Use thick oven mitts for safety.

Step 11:

  • Coat the skillet with a little oil. It should sizzle when it hits metal.

Step 12:

  • Pour the thick batter into the skillet. Spread it out to the very edges.

Step 13:

  • Bake for twenty to twenty-five minutes. Set a timer so you do not forget.

Step 14:

  • Check the top for a golden color. It should look very delicious and brown.

Step 15:

  • Let it cool for ten minutes first. This makes it easier to cut.
