Ingredients
  

  • 2 Cups All-purpose Flour
  • 1/2 Cup Powdered Sugar
  • 1 Cup Salted Butter
  • 2 Cups Granulated Sugar
  • 4 Large Eggs
  • 6 Tbsp Lemon Juice
  • 1 Tbsp Lemon Zest
  • 1/2 Tsp Baking Powder
  • 1/4 Cup All-purpose Flour For Filling

Instructions
 

  • Preheat your oven to 350 degrees now. Line your baking pan with parchment paper. Leave a little paper hanging over the edges.
  • Mix the flour and powdered sugar together. Cut the cold butter into small cubes. Add the butter cubes to the dry mix.
  • Use a fork to blend the mixture. It should look like coarse crumbs. Press the dough into the prepared pan.
  • Bake the crust for about twenty minutes. It should look a very light golden brown. Take it out and let it rest.
  • Whisk the eggs and granulated sugar well. Add the fresh lemon juice and zest. Stir in the flour and baking powder slowly.
  • Pour the lemon mix over the warm crust. Return the pan to the hot oven. Bake it for another twenty-five minutes.
  • The center should be set and firm. Remove the pan from the oven carefully. Let the bars cool completely at room temperature.

  • Use fresh lemons for the best citrus flavor.
  • Do not overbake the shortbread bottom layer.
