Ingredients
  

  • 1 Whole Chicken About 4-5 Lbs
  • 1/2 Cup Unsalted Butter
  • 2 Tbsp Fresh Rosemary
  • 2 Tbsp Fresh Thyme
  • 1 Large Lemon
  • 4 Garlic Cloves
  • 1 Tbsp Kosher Salt
  • 1 Tsp Black Pepper

Instructions
 

  • Preheat your oven to 425 degrees Fahrenheit. This high heat ensures crispy skin. Remove the chicken from the fridge early. Let it sit for twenty minutes.
  • Pat the chicken dry with paper towels. Remove any moisture from the skin. This step is very important for crunch. Season the inside with salt and pepper.
  • Mix the softened butter with chopped herbs. Rub this mixture under the chicken skin. Be careful not to tear the skin. Spread the rest of the butter on top.
  • Stuff the cavity with lemon halves and garlic. Add extra herb sprigs inside too. This flavors the meat from the inside out. Tie the legs with kitchen twine.
  • Place the chicken in the roasting pan. Put it in the center of the oven. Roast it for about ninety minutes. The juices should run very clear.
