Equipment

  • Large pot
  • Colander
  • Whisk
  • Baking dish
  • Cheese grater
  • Medium saucepan

Ingredients

  • 1 Lb Macaroni Noodles
  • 4 Cups Sharp Cheddar Cheese
  • 2 Cups Gruyère Cheese
  • 1/2 Cup Unsalted Butter
  • 1 Cup Heavy Cream
  • 1 Cup Whole Milk
  • 1/2 Cup Breadcrumbs
  • 1 Tsp Salt
  • 1/2 Tsp Black Pepper

Instructions

  • Preheat your oven to 350 degrees now. Grease your baking dish with a little butter. This prevents the pasta from sticking to sides.
  • Boil a large pot of salted water. Add your macaroni noodles to the boiling water. Cook them until they are just slightly firm.
  • Drain the pasta in a colander. Rinse it with cool water for a second. Set the noodles aside while you make sauce.
  • Melt the butter in a medium saucepan. Stir in the heavy cream and the milk. Heat the mixture until it is very warm.
  • Add the shredded cheeses to the warm milk. Whisk constantly until the cheese melts completely. The sauce should look very smooth and thick.
  • Pour the cheese sauce over the cooked macaroni. Stir well so every noodle is fully coated. Season the mixture with salt and pepper now.
  • Transfer the mac and cheese to the dish. Sprinkle the breadcrumbs evenly over the top. Add a few small butter pieces on top.
  • Place the dish in the hot oven. Bake it for about twenty minutes total. The top should be bubbly and golden brown.

Notes

  • Always grate your own cheese from a block.
  • Do not overcook the pasta before you bake it.
  • Use whole milk for the creamiest sauce texture.
  • Add a pinch of paprika for extra color.
  • Let the dish rest for five minutes after baking.
  • Keep the heat low when melting the cheese.
