Equipment

  • Large mixing bowl
  • Medium mixing bowl
  • Whisk
  • Non-Stick Griddle
  • Measuring cups
  • Spatula

Ingredients

  • 1.5 cups ALL-PURPOSE FLOUR
  • 2 tbsp GRANULATED SUGAR
  • 2 tsp BAKING POWDER
  • 1 tsp SALT
  • 2 large EGGS
  • 1.25 cups WHOLE MILK
  • 4 tbsp MELTED BUTTER
  • 1 tsp VANILLA EXTRACT

Instructions

Step 1:

  • Whisk your flour and sugar in a bowl. Add the baking powder and the salt now. Stir them until they are well combined.

Step 2:

  • Grab your second bowl for the wet items. Beat the eggs gently with a whisk. Pour in the milk and the vanilla.

Step 3:

  • Add the melted butter to the wet mix. Stir quickly so the butter stays liquid. Do not let it sit too long.

Step 4:

  • Pour the wet mix into the dry mix. Stir them together with a large spoon. Stop when the flour just disappears.

Step 5:

  • Heat your griddle over medium heat. Lightly grease the surface with a bit of butter. Wait for the pan to get hot.

Step 6:

  • Drop small circles of batter onto the pan. Use about one-fourth cup for each pancake. Space them out so they do not touch.

Step 7:

  • Watch for small bubbles on the top surface. Flip the pancakes when the edges look dry. Cook the other side for one minute.

Notes

  • Do not overmix the batter to keep it fluffy.
  • Let the batter rest for five minutes before cooking.
  • Use a warm oven to keep finished pancakes hot.
  • Wipe the pan between batches to prevent burnt bits.
  • Fresh baking powder ensures the best height for cakes.
