Equipment

  • Large mixing bowl
  • Hand mixer
  • Rubber spatula
  • Box Grater
  • Measuring cup
  • Airtight container

Ingredients

  • 2 cups SHARP CHEDDAR CHEESE
  • 8 oz CREAM CHEESE
  • 1/2 cup MAYONNAISE
  • 4 oz PIMENTOS
  • 1/2 tsp GARLIC POWDER
  • 1/2 tsp ONION POWDER
  • 1/8 tsp CAYENNE PEPPER

Instructions

Step 1: Soften the Base

  • Place your softened cream cheese in the bowl. Use your hand mixer on low speed. Beat it until it looks very smooth. This creates a perfect base for mixing.

Step 2: Add Creamy Items

  • Add the mayonnaise to the fluffy cheese. Stir in your garlic and onion powders. Mix them until the color is even. This ensures balance in every bite.

Step 3: Grate the Cheese

  • Grate your blocks of sharp cheese carefully. Use the large holes on your grater. Add the cheese to your mixing bowl. Do not pack the cheese down yet.

Step 4: Add the Peppers

  • Open your jar of diced pimentos now. Drain all the liquid from the jar. Pour the peppers into the cheese mixture. They add a beautiful pop of color.

Step 5: Fold Everything Together

  • Use your spatula to fold the items. Mix until the cheese has a coating. Do not overmix the red peppers now. Your dip is now ready to eat.

Step 6: Chill the Dip

  • Place the bowl in the fridge now. Let it chill for thirty minutes. This makes the taste much better. Chilling allows flavors to marry well.

Always use blocks of cheese for best taste.
Make sure your cream cheese is very soft.
Drain the pimentos well to avoid watery dip.
Add more cayenne if you want a kick.
