- 3 Cups Cooked Chicken
- 2 Cups Sour Cream
- 1 Can Green Chilis
- 10 Pieces Flour Tortillas
- 3 Cups Shredded Cheese
- 1 Cup Chicken Broth
- 2 Tbsp Butter
- 2 Tbsp All Purpose Flour
Preheat your oven to 350 degrees Fahrenheit first. Lightly grease your large baking dish with oil. This prevents the tortillas from sticking to it.
Shred your cooked chicken into small bite pieces. Place the chicken in a large mixing bowl. Add half of your shredded cheese to it.
Melt the butter in a small saucepan now. Whisk in the flour to make a paste. Slowly pour in the warm chicken broth.
Add the sour cream and green chilis next. Stir the sauce until it is very smooth. Do not let the sauce boil too hard.
Dip each tortilla into the creamy sauce quickly. Fill the center with the chicken and cheese. Roll the tortilla up very tightly now.
Place the rolled enchiladas in the baking dish. Pour the remaining sauce over the top evenly. Sprinkle the rest of the cheese on top.
Bake the dish for twenty or thirty minutes. The cheese should be bubbly and light brown. Serve the meal while it is still hot.
- Use rotisserie chicken to make the prep work fast.
- Do not overfill the tortillas or they might break.
- Warm the tortillas slightly before rolling to avoid cracking.
- Pour sauce on the edges to keep them soft.
- Let the dish rest for five minutes before serving.
