Ingredients
  

  • 1 Tbsp Olive Oil
  • 1 Lb Italian Sausage
  • 1 Small Onion
  • 3 Cloves Garlic
  • 6 Cups Chicken Broth
  • 1 Tsp Oregano
  • 20 Oz Cheese Tortellini
  • 5 Oz Fresh Spinach
  • 1 Cup Heavy Cream
  • 1/2 Cup Parmesan Cheese

Instructions
 

  • Place your large pot on the stove. Add the olive oil over medium heat. Let the oil get warm and shiny.
  • Add the Italian sausage to the pot. Break the meat into small crumbles now. Cook until the meat is no longer pink.
  • Add the chopped onion to the meat. Stir the onions until they look clear. This takes about five minutes usually.
  • Now add the minced garlic to the pot. Cook the garlic for only one minute. Do not let the garlic turn brown.
  • Pour the chicken broth into the pot. Add the dried oregano and black pepper. Stir everything together with your wooden spoon.
  • Bring the liquid to a rolling boil. This blends all the savory flavors together
  • Add the cheese tortellini to the boiling water. Lower the heat to a gentle simmer. Cook the pasta for five soft minutes.
  • Check the pasta package for exact times. The tortellini should float when they are done.
  • Stir in the fresh baby spinach leaves. They will shrink in the hot liquid. Pour the heavy cream in very slowly.
  • Stir until the soup looks creamy and light. Let it warm through for two minutes.
  • Turn off the heat on the stove. Taste the soup for salt and pepper. Ladle the soup into large serving bowls.
  • Top with plenty of grated Parmesan cheese. Serve your warm soup immediately to guests.
