Ingredients
  

  • 6 Cups Baby Spinach
  • 2 Cups Strawberries
  • 1 Cup Blueberries
  • 1/2 Cup Pecans
  • 4 Oz Goat Cheese
  • 1/2 Cup Mayonnaise
  • 2 Tbsp Apple Cider Vinegar
  • 1/4 Cup Sugar
  • 1 Tbsp Poppy Seeds

Instructions
 

  • Wash your spinach and berries in cold water. Pat them dry with a clean paper towel. Wet leaves will make the salad soggy.
  • Slice the strawberries into thin pieces. Keep them uniform for a pretty look. Put them in the large mixing bowl.
  • Add the baby spinach to the large bowl. Pour in the fresh blueberries. Toss them together with your hands or tongs.
  • Combine the dressing ingredients in your small jar. Put the lid on very tight. Shake the jar hard for thirty seconds.
  • Pour the dressing over the salad greens. Add the toasted pecans and crumbled goat cheese. Toss everything one last time before serving.

Notes

  • Use very fresh spinach for the best leaf crunch.
  • Toast pecans in a pan for three minutes first.
  • Keep the dressing separate until you are ready.
  • Dry the fruit well so the dressing sticks.
  • Add the goat cheese last to keep it pretty.
