  • 4 Ears Fresh Sweet Corn
  • 1/4 Cup Mayonnaise
  • 2 Tbsp Sour Cream
  • 1/2 Tsp Chili Powder
  • 1/3 Cup Cotija Cheese
  • 1 Whole Lime
  • 2 Tbsp Fresh Cilantro

Instructions
 

  • Clean your fresh corn ears very carefully now. Remove all the silk and the outer husks. Pat them dry with a clean paper towel.
  • Turn the stove to high heat now. Place the corn ears on the hot surface. Rotate them slowly until they are lightly charred.
  • Mix the mayo and sour cream in a bowl. Add the chili powder and stir it well. This creates a thick and flavorful spread.
  • Brush the creamy mixture over the warm corn. Cover every side of the corn ears evenly. The heat will help the flavors sink in.
  • Sprinkle the crumbled Cotija cheese over the top. Add the chopped cilantro for a fresh look. Squeeze fresh lime juice over the corn now.
