Ingredients
  

  • 2 tbsp BUTTER
  • 1 cup YELLOW ONION
  • 3 cloves GARLIC CLOVES
  • 2 cans CANNED TOMATOES
  • 2 cups CHICKEN BROTH
  • 1 cup HEAVY CREAM
  • 1/4 cup FRESH BASIL
  • 1 tsp SALT
  • 1/2 tsp BLACK PEPPER

Instructions
 

Step 1:

  • Place the large pot on the stove. Turn the heat to medium now. Add the butter to the pot. Let the butter melt slowly.

Step 2:

  • Add the chopped onions to the pot. Stir them with your wooden spoon. Cook them until they are soft. This takes about five minutes.

Step 3:

  • Add the minced garlic to the pot. Stir it for one minute only. Do not let the garlic burn. It should smell very fragrant.

Step 4:

  • Pour the canned tomatoes into the pot. Use your spoon to crush them. Add the chicken broth next. Stir everything together well.

Step 5:

  • Turn the heat up to high. Bring the soup to a boil. Then turn the heat to low. Let it simmer for ten minutes.

Step 6:

  • Use your immersion blender in the pot. Blend until the soup is smooth. Be careful with the hot liquid. Do not splash the soup.

Step 7:

  • Stir in the heavy cream slowly. Add the fresh chopped basil now. Add the salt and the pepper. Stir it one last time.

Step 8:

  • Let the soup warm through gently. Do not let it boil again. Ladle the soup into warm bowls. Serve it to your family.

Notes

Use high quality canned tomatoes for best results.
Make sure the onions are very soft first.
Do not brown the garlic or it tastes bitter.
Add the cream at the very end.
Fresh basil is much better than dried herbs.
Taste the soup before you add more salt.
Use a regular blender if you lack an immersion.
Let the soup cool slightly before blending it.
Always stir the bottom of the pot often.
