- 6 Cups Watermelon
- 1/2 Cup Feta Cheese
- 1/4 Cup Fresh Mint
- 1 Cup Cucumber
- 2 Tbsp Olive Oil
- 1 Tbsp Lime Juice
- 1 Tsp Honey
- 1/2 Tsp Sea Salt
Cut your watermelon into small even cubes. Remove the green rind and all black seeds. Place the red cubes into your large bowl.
Slice your fresh cucumber into thin half-moons. Add them to the bowl with the watermelon. These two fruits are the main crunchy base.
Whisk the lime juice and olive oil. Mix them in a small jar with honey. Add a pinch of salt and black pepper.
Pour the dressing over the melon and cucumber. Toss the fruit very gently with clean hands. Do not bruise the watermelon pieces at all.
Sprinkle the crumbled feta cheese on the top. Add the fresh mint leaves right before serving. This keeps the herbs from turning dark brown.
- Use a very cold watermelon for the best refreshing taste.
- Add the feta cheese only right before you eat it.
- Tear the mint by hand to release more fresh oils.
- Do not over-mix the salad or it will get soggy.
- Pick a heavy watermelon for the sweetest and juiciest flavor.
