Ingredients
  

  • 6 Cups Watermelon
  • 1/2 Cup Feta Cheese
  • 1/4 Cup Fresh Mint
  • 1 Cup Cucumber
  • 2 Tbsp Olive Oil
  • 1 Tbsp Lime Juice
  • 1 Tsp Honey
  • 1/2 Tsp Sea Salt

Instructions
 

  • Cut your watermelon into small even cubes. Remove the green rind and all black seeds. Place the red cubes into your large bowl.
  • Slice your fresh cucumber into thin half-moons. Add them to the bowl with the watermelon. These two fruits are the main crunchy base.
  • Whisk the lime juice and olive oil. Mix them in a small jar with honey. Add a pinch of salt and black pepper.
  • Pour the dressing over the melon and cucumber. Toss the fruit very gently with clean hands. Do not bruise the watermelon pieces at all.
  • Sprinkle the crumbled feta cheese on the top. Add the fresh mint leaves right before serving. This keeps the herbs from turning dark brown.

Notes

  • Use a very cold watermelon for the best refreshing taste.
  • Add the feta cheese only right before you eat it.
  • Tear the mint by hand to release more fresh oils.
