Ingredients
  

  • 4 Cups Shredded Chicken
  • 4 Cups Chicken Broth
  • 2 Cans White Beans
  • 1 Cup Heavy Cream
  • 4 Oz Cream Cheese
  • 1 Small White Onion
  • 2 Cloves Garlic
  • 7 Oz Green Chiles
  • 1 Tsp Cumin
  • 1 Tsp Oregano
  • 1/2 Tsp Salt
  • 1 Tbsp Olive Oil

Instructions
 

  • Sauté the diced onions in the large pot. Use a little oil or butter for this. Cook them until they look soft and clear.
  • Add the minced garlic to the softened onions. Stir them together for about one minute. Do not let the garlic turn brown.
  • Pour the chicken broth into the Dutch oven. Add the shredded chicken and the white beans. Stir everything well to combine the flavors.
  • Mix in the diced green chiles and spices. Bring the mixture to a gentle boil now. Then turn the heat down to a low simmer.
  • Stir in the heavy cream and cream cheese. Keep stirring until the cheese is completely melted. The soup should look thick and very creamy.
  • Let the chili simmer for ten more minutes. This allows the spices to blend with the chicken. Taste it and add salt if you need.

Notes

  • Use rotisserie chicken to save a lot of time.
  • Do not boil the chili after adding heavy cream.
  • Mash some beans to make the soup even thicker.
  • Use fresh lime juice for a bright, citrus finish.
  • Top with avocado slices for a cool, creamy bite.
