Ingredients
  

  • 1 lb large shrimp peeled and deveined
  • 12 oz linguine or spaghetti
  • 4 tablespoons butter
  • 4 garlic cloves minced
  • 1/3 cup fresh lemon juice
  • 2 tablespoons lemon zest
  • 1/4 cup white wine optional
  • 2 tablespoons olive oil
  • 1/4 cup fresh parsley chopped
  • Salt and pepper to taste
  • Red pepper flakes optional

Instructions
 

  • Boil salted water in large pot.
  • Cook pasta according to package directions.
  • Heat olive oil in large skillet.
  • Season shrimp with salt and pepper.
  • Cook shrimp 2 minutes per side.
  • Remove shrimp from pan temporarily.
  • Add butter to same skillet.
  • Sauté minced garlic for 30 seconds.
  • Pour in lemon juice and wine.
  • Return cooked shrimp to pan.
  • Drain pasta, reserve 1/2 cup water.
  • Add pasta to skillet with sauce.
  • Toss everything together with tongs.
  • Add pasta water if needed.
  • Sprinkle with lemon zest and parsley.

Notes

  1. Don't overcook shrimp - they turn rubbery when overdone
  2. Save pasta water before draining for silky sauce consistency
  3. Use fresh lemon juice for brightest flavor profile
  4. Pat shrimp completely dry before seasoning and cooking
  5. Add garlic last to prevent burning and bitterness
