Equipment

  • Large heavy skillet with a lid.
  • Tongs
  • Two shallow bowls.
  • Measuring cups and spoons
  • A wire cooling rack.
  • Paper towels

Ingredients

  • 1 whole chicken cut into 8 pieces.
  • 1 cup all-purpose flour.
  • 1 teaspoon salt.
  • 1/2 teaspoon black pepper.
  • 1/2 teaspoon paprika.
  • 2 large eggs.
  • 2 tablespoons milk.
  • 1/2 cup vegetable oil for frying.
  • 1/2 cup heavy cream for gravy.

Instructions

  • Pat the chicken pieces dry with paper towels. This helps the coating stick better.
  • Mix flour, salt, pepper, and paprika in one bowl. Whisk eggs and milk in a second bowl.
  • Dredge chicken in flour, then dip in egg. Finish with one more light flour coating.
  • Heat oil in your skillet over medium heat. Fry chicken until golden on both sides.
  • Cover the pan with a tight lid. Lower the heat and cook for 15 minutes.
  • Remove chicken and drain most oil. Stir in remaining flour and cream until thick.

Notes

  • Use a cast-iron skillet for even heat.
  • Do not crowd the pan while frying.
  • Always use fresh chicken for the best flavor.
  • Let the chicken rest before serving.
  • This keeps the juices inside the meat.
  • Serve the gravy on the side to stay crispy.
