Pick through crab meat.
Remove any shell pieces carefully.
Place clean crab in large bowl.
Mix mayonnaise, egg, and mustard together.
Whisk until completely smooth and combined.
Add Old Bay seasoning to mixture.
Include salt and pepper too.
Pour wet mixture over crab meat.
Add fresh parsley as well.
Gently fold ingredients together carefully.
Don't break crab pieces apart.
Add half the breadcrumbs slowly.
Mix just until ingredients hold together.
Form mixture into six equal patties.
Make them about three inches wide.
Coat each patty with remaining breadcrumbs.
Press coating gently onto surface.
Heat oil in large skillet.
Use medium-high heat for cooking.
Cook crab cakes three minutes.
Flip carefully with thin spatula.
Cook second side until golden.
This takes about three minutes.
