Ingredients
  

  • 1 pound fresh lump crab meat
  • 1/2 cup mayonnaise
  • 1 large egg
  • 1 tablespoon Dijon mustard
  • 1 teaspoon Old Bay seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons fresh parsley chopped
  • 1 cup panko breadcrumbs
  • 2 tablespoons vegetable oil for frying

Instructions
 

  • Pick through crab meat.
  • Remove any shell pieces carefully.
  • Place clean crab in large bowl.
  • Mix mayonnaise, egg, and mustard together.
  • Whisk until completely smooth and combined.
  • Add Old Bay seasoning to mixture.
  • Include salt and pepper too.
  • Pour wet mixture over crab meat.
  • Add fresh parsley as well.
  • Gently fold ingredients together carefully.
  • Don't break crab pieces apart.
  • Add half the breadcrumbs slowly.
  • Mix just until ingredients hold together.
  • Form mixture into six equal patties.
  • Make them about three inches wide.
  • Coat each patty with remaining breadcrumbs.
  • Press coating gently onto surface.
  • Heat oil in large skillet.
  • Use medium-high heat for cooking.
  • Cook crab cakes three minutes.
  • Flip carefully with thin spatula.
  • Cook second side until golden.
  • This takes about three minutes.
