Ingredients
  

  • 1 cup quinoa rinsed
  • 2 cups water
  • ½ teaspoon salt
  • 1 cup canned chickpeas washed and drained
  • 1 cup cherry tomatoes cut in half
  • 1 cup cucumber chopped
  • ¼ cup red onion sliced thin
  • ½ cup Kalamata olives cut in half
  • ½ cup feta cheese crumbled
  • 2 tablespoons chopped parsley
  • 3 tablespoons tahini
  • 2 tablespoons lemon juice
  • 1 tablespoon olive oil
  • 1 garlic clove chopped small
  • 2 teaspoons maple syrup or honey
  • Salt and pepper to taste
  • 2 to 4 tablespoons water to thin

Instructions
 

  • Rinse the quinoa under cold water.
  • Put quinoa, water, and salt in a pot.
  • Bring it to a boil, then lower the heat.
  • Cover and cook for 15 minutes.
  • Turn off the heat and let it sit.
  • Fluff the quinoa with a fork and let it cool.
  • Cut all the vegetables and set them aside.
  • Mix the dressing in a small bowl.
  • Whisk until smooth. Add water to make it thinner.
  • Put the quinoa and vegetables in a big bowl.
  • Add chickpeas, feta, olives, and parsley.
  • Pour the dressing on top.
  • Mix everything together gently

Notes

  1. Use colorful quinoa for extra flavor.
  2. Chill the quinoa before mixing the bowl.
  3. Add cooked chicken or tofu for more protein.
  4. Cut the veggies early to save time later.
  5. Make extra dressing—it’s good on salads too!
