Ingredients

  • 10 large eggs.
  • 1/2 cup of whole milk.
  • 1/2 cup of shredded cheddar cheese.
  • 1/2 cup of chopped fresh spinach.
  • 1/4 cup of diced red bell peppers.
  • 1/4 cup of diced yellow onions.
  • 1/2 teaspoon of fine sea salt.
  • 1/4 teaspoon of black pepper.
  • 1/2 cup of cooked bacon bits.

Instructions

Heat the Oven

  • Preheat your oven to 350 degrees Fahrenheit first.

Prep the Muffin Tin

  • Spray the muffin tin with non-stick oil. Do not skip this part. The eggs will stick.

Whisk the Eggs

  • Crack all ten eggs into a large bowl. Add the milk, salt, and black pepper. Whisk until the mixture is very smooth.

Prepare the Fillings

  • Chop your spinach, peppers, and onions into small bits. Make sure the bacon is already cooked.

Fill the Muffin Cups

  • Drop the veggies and meat into each cup. Fill them about halfway with these solid ingredients.

Pour the Egg Mixture

  • Pour the egg liquid over the fillings. Leave a little space at the top. The eggs will rise as they bake.

Add the Cheese

  • Sprinkle the shredded cheese on top of each cup. Use as much as you like.

Bake the Omelets

  • Place the tin in the hot oven. Bake for about 20 to 25 minutes.

Check for Doneness

  • The centers should be firm to the touch. They should not look liquid or jiggly.

Cool and Serve

  • Let them cool for five minutes. Use a plastic knife to pop them out.

Notes

  • Want perfect results every time? Use these easy tips.
  • Use high-quality eggs for the best flavor.
  • Do not overfill the muffin cups with liquid.
  • They might spill over in the oven.
  • Chop your vegetables into very tiny pieces.
  • Big chunks make the muffins fall apart easily.
  • Squeeze the water out of frozen spinach first.
  • Wet veggies make the eggs watery.
  • Always grease the tin very well.
  • Silicone muffin liners are also a great choice.
  • They make cleaning up much faster.
  • You can also add hot sauce for extra kick.
