Ingredients
  

  • 200 g self-raising flour
  • 150 g butter softened
  • 150 g brown sugar
  • 3 large eggs
  • 2 tbsp instant coffee dissolved in 2 tbsp water
  • 100 g walnuts chopped
  • 1 tsp vanilla extract
  • Pinch of salt

Instructions
 

  • Preheat oven to 180°C (350°F).
  • Grease loaf pan thoroughly with butter.
  • Dissolve coffee in hot water completely.
  • Cream butter and sugar until fluffy.
  • Add eggs one at a time.
  • Mix in vanilla extract carefully.
  • Fold in flour and salt gently.
  • Add dissolved coffee and mix well.
  • Stir in chopped walnuts evenly.
  • Pour batter into prepared pan smoothly.
  • Bake for 45-50 minutes until done.
  • Test with toothpick for doneness.
  • Cool in pan for 10 minutes.
  • Transfer to wire rack to cool.
