Ingredients
  

  • 1 lb LAMB ground
  • 2 cloves GARLIC
  • 1 tsp CUMIN
  • 1 tsp CORIANDER
  • 1/4 tsp CINNAMON
  • 2 tbsp PARSLEY
  • 1 tsp SALT
  • 1/2 tsp BLACK PEPPER
  • 1 tbsp OLIVE OIL

Instructions
 

Soak the Skewers

  • Place your wooden skewers in a tray of water. Let them soak for at least thirty minutes first. This prevents them from catching fire on grill.

Mix the Spices

  • Combine all the dry spices in your large bowl. Stir them together until the colors are very even. This ensures every bite has the same flavor.

Add the Lamb

  • Put the ground lamb into the spice bowl now. Use your clean hands to mix everything together well. Do not over-work the meat or it gets tough.

Shape the Koftas

  • Take a small handful of the seasoned meat mix. Form it into a long and thin sausage shape. Thread the meat carefully onto each soaked wooden skewer.

Chill the Meat

  • Place the finished skewers on a clean flat plate. Put them in the fridge for twenty minutes now. This helps the meat stay on the stick.

Heat the Pan

  • Brush your grill pan with a little olive oil. Set the heat to medium-high on your stove. The pan should be very hot before cooking.

Grill the Koftas

  • Place the skewers on the hot grill pan carefully. Cook them for about four minutes on each side. They should look dark brown and very charred.

Rest and Serve

  • Take the meat off the heat once fully cooked. Let them rest for five minutes before you eat. This keeps the juices inside the soft lamb.
