Ingredients
  

  • 1 cup of dried mango finely chopped.
  • 1 cup of unsweetened shredded coconut.
  • 1/2 cup of almond flour.
  • 2 tablespoons of honey or maple syrup.
  • 1 tablespoon of coconut oil melted.
  • 1/2 teaspoon of vanilla extract.
  • Extra shredded coconut for rolling.

Instructions
 

Prep the Mango

  • Put the dried mango in a bowl of warm water for ten minutes. Drain it very well.

Blend the Fruit

  • Place the softened mango into the food processor. Pulse it until it is a thick paste.

Add the Dry

  • Add the shredded coconut and almond flour to the processor. Pulse again to mix.

Add the Sweetener

  • Pour in the honey, melted coconut oil, and vanilla extract. Blend until a dough forms.

Check the Mix

  • The dough should be sticky but hold its shape. If it is too wet, add more flour.

Scoop the Balls

  • Use a small spoon to scoop out the dough. Roll it between your palms into a ball.

Roll in Coconut

  • Place the extra shredded coconut on a plate. Roll each truffle until it is fully white.

Chill the Truffles

  • Put the truffles on a tray with parchment paper. Refrigerate for one hour to set firm.

Notes

  • Use soft dried mango. If the mango is too hard, the truffles will be very grainy.
  • Soak the fruit. This makes the blending process much easier and the texture smoother.
  • Use unsweetened coconut. The mango and honey provide enough sweetness for the treat.
