Ingredients

  • 8 boneless skinless chicken thighs
  • 2 large carrots chopped
  • 2 celery stalks chopped
  • 1 large onion chopped
  • 4 medium potatoes peeled and quartered
  • 4 cups chicken broth
  • 1 cup frozen peas
  • 1/2 cup heavy cream
  • 1 teaspoon dried thyme
  • Salt and black pepper to taste
  • Fresh parsley for garnish

Instructions
 

Brown the Chicken

  • Heat olive oil in your pot. Medium-high heat is best. Add chicken thighs. Brown them for 3-4 minutes per side. They should be golden. Remove chicken from the pot. Set aside for now.

Sauté Vegetables

  • Add carrots, celery, and onion to the pot. Cook until soft. This takes about 5-7 minutes. Stir occasionally.

Add Potatoes and Broth

  • Stir in the quartered potatoes. Pour in the chicken broth. Add dried thyme. Season with salt and pepper. Bring to a boil.

Simmer the Stew

  • Reduce heat to low. Return chicken to the pot. Cover and simmer. Cook for 20-25 minutes. Chicken should be cooked through. Potatoes should be tender.

Finish with Cream and Peas

  • Stir in frozen peas. Pour in the heavy cream. Cook for another 5 minutes. The sauce will thicken slightly.
