Ingredients
  

  • 2 cups of old-fashioned rolled oats.
  • 1 cup of creamy natural peanut butter.
  • 1/2 cup of honey or maple syrup.
  • 1/2 cup of mini semi-sweet chocolate chips.
  • 1/4 cup of ground flaxseeds or chia seeds optional.
  • 1 teaspoon of pure vanilla extract.
  • 1/2 teaspoon of ground cinnamon.
  • A pinch of sea salt.

Instructions
 

Prep the Bowl

  • Place the rolled oats, flaxseeds, cinnamon, and salt in your large mixing bowl.

Add the Liquids

  • Pour in the creamy peanut butter, honey, and vanilla extract. Stir everything together.

Fold in Chocolate

  • Add the mini chocolate chips to the mixture. Stir until they are evenly spread.

Chill the Mix

  • Place the bowl in the fridge for 30 minutes. This makes the dough much easier to roll.

Scoop the Dough

  • Use a spoon or cookie scoop to take about one tablespoon of the mixture at a time.

Roll into Balls

  • Roll the mixture between your palms to form a smooth ball about one inch wide.

Arrange the Bites

  • Place the finished energy bites on a plate or in a container lined with parchment paper.

Notes

  • Use old-fashioned oats. They provide a much heartier and chewier texture than quick oats.
  • Warm the honey. If your honey is very thick, microwave it for 10 seconds so it mixes easily.
  • Wet your hands. If the dough sticks to your palms, a little water helps you roll smooth balls.
  • Add extra crunch. Stirring in some chopped peanuts or sunflower seeds adds a great texture.
  • Check the stickiness. If the mix is too dry, add a splash of water; if too wet, add more oats.
  • Use mini chips. Small chocolate chips stay inside the balls better than large chunks.
