Ingredients
  

  • 1 lb ground beef
  • 8 flour tortillas
  • 2 cups shredded cheddar cheese
  • 1 can enchilada sauce 10 oz
  • 1 small onion diced
  • 2 cloves garlic minced
  • 1 tsp cumin
  • Salt and pepper to taste

Instructions
 

  • Preheat oven to 375°F.
  • Cook ground beef in large skillet.
  • Add diced onion and garlic.
  • Season with cumin, salt, and pepper.
  • Drain excess fat from beef mixture.
  • Warm tortillas in microwave briefly.
  • Fill each tortilla with beef mixture.
  • Add cheese to each tortilla.
  • Roll tortillas tightly and place seam-down.
  • Pour enchilada sauce over rolled tortillas.
  • Sprinkle remaining cheese on top generously.
  • Bake for 20-25 minutes until bubbly.

Notes
