- 15 Oz Black Beans
- 15 Oz Black Eyed Peas
- 15 Oz Golden Corn
- 1 Cup Roma Tomatoes
- 1/2 Cup Red Onion
- 1/2 Cup Bell Pepper
- 1/4 Cup Fresh Cilantro
- 2 Whole Avocados
- 1/4 Cup Olive Oil
- 2 Tbsp Red Wine Vinegar
- 2 Tbsp Lime Juice
- 1 Tsp Salt
- 1/2 Tsp Black Pepper
Open your cans of beans and corn first. Drain the liquid out into the sink. Rinse them well under cool, running water.
Grab your knife and the cutting board now. Dice the peppers, onions, and tomatoes into small bits. Try to keep the pieces the same size.
Put all the vegetables into your large bowl. Add the rinsed beans and corn to the mix. Stir them gently with your large spoon.
Mix the oil, vinegar, and lime in a jar. Add a pinch of salt and some pepper. Shake the jar until the dressing looks smooth.
