Ingredients
  

  • 15 Oz Black Beans
  • 15 Oz Black Eyed Peas
  • 15 Oz Golden Corn
  • 1 Cup Roma Tomatoes
  • 1/2 Cup Red Onion
  • 1/2 Cup Bell Pepper
  • 1/4 Cup Fresh Cilantro
  • 2 Whole Avocados
  • 1/4 Cup Olive Oil
  • 2 Tbsp Red Wine Vinegar
  • 2 Tbsp Lime Juice
  • 1 Tsp Salt
  • 1/2 Tsp Black Pepper

Instructions
 

  • Open your cans of beans and corn first. Drain the liquid out into the sink. Rinse them well under cool, running water.
  • Grab your knife and the cutting board now. Dice the peppers, onions, and tomatoes into small bits. Try to keep the pieces the same size.
  • Put all the vegetables into your large bowl. Add the rinsed beans and corn to the mix. Stir them gently with your large spoon.
  • Mix the oil, vinegar, and lime in a jar. Add a pinch of salt and some pepper. Shake the jar until the dressing looks smooth.
  • Pour the dressing over the colorful bean mixture. Toss everything until the vegetables are well coated. Add the diced avocado right before you serve.

Notes

  • Rinse the canned beans very well to remove starch.
  • Dice all vegetables into very small, uniform cubes.
  • Let the dip sit for one hour before eating.
  • Add the avocado last so it stays nice and green.
  • Use fresh lime juice instead of the bottled kind.
