Equipment

  • Large pot
  • Sharp knife
  • Cutting board
  • Colander
  • Whisk
  • Measuring cups
  • Measuring spoons
  • Wooden spoon
  • Small bowl

Ingredients

  • 1.5 lbs NEW POTATOES
  • 2 cups FROZEN PEAS
  • 3 tbsp UNSALTED BUTTER
  • 3 tbsp ALL-PURPOSE FLOUR
  • 1 cup WHOLE MILK
  • 1/2 cup HEAVY CREAM
  • 1 tsp SALT
  • 1/2 tsp BLACK PEPPER
  • 1/2 tsp ONION POWDER
  • 2 tbsp FRESH DILL

Instructions

Step 1:

  • Wash your new potatoes under cold water. Scrub away any dirt from the skin. Pat them dry with a clean towel.

Step 2:

  • Cut the potatoes into small, even cubes. Keep the skins on for extra texture. Small pieces cook much faster than large ones.

Step 3:

  • Place your potatoes in the large pot. Add enough water to cover them fully. Add a big pinch of salt now.

Step 4:

  • Turn the stove to high heat. Bring the water to a rolling boil. Let the potatoes cook for ten minutes.

Step 5:

  • Add the frozen peas to the pot. Let them boil with the potatoes. Cook for exactly three more minutes.

Step 6:

  • Pour the vegetables into a large colander. Let all the steam and water escape. Set them aside on the counter.

Step 7:

  • Melt your butter in the empty pot. Use medium heat so it does not burn. The butter should bubble and smell nutty.

Step 8:

  • Whisk the flour into the melted butter. Cook this paste for one minute. This removes the raw flour taste.

Step 9:

  • Slowly pour in the milk and cream. Keep whisking to prevent any lumps. The sauce will start to thicken soon.

Step 10:

  • Add the salt, pepper, and onion powder. Taste the sauce to check the seasoning. Adjust the salt if you need more.

Step 11:

  • Gently fold the vegetables back into the sauce. Use a wooden spoon for this part. Coat every piece of potato and pea.

Step 12:

  • Top the dish with fresh chopped dill. Serve it while it is still steaming. Enjoy your delicious homemade side dish!

Notes

  • Cut potatoes into equal sizes for even cooking.
  • Do not overcook peas to keep them green.
  • Use red potatoes if you want more color.
  • Salt the boiling water to flavor the potatoes.
  • Whisk the sauce constantly to avoid any burning.
  • Add a splash of milk if sauce is thick.
  • Use fresh herbs for the best possible aroma.
  • Warm the cream slightly before adding to pot.
  • Try white pepper for a very smooth look.
  • Let the dish sit for five minutes before serving.
