Equipment

  • Baking dish
  • Mixing bowl
  • Mixing bowl
  • Rubber spatula
  • Small Microwaveable Bowl

Ingredients

  • 2 Cans Pineapple Tidbits 20 Oz Each
  • 1 Cup Granulated Sugar
  • 6 Tbsp All-purpose Flour
  • 2 Cups Sharp Cheddar Cheese
  • 1 Sleeve Ritz Crackers
  • 1/2 Cup Salted Butter

Instructions

  • Preheat your oven to 350 degrees Fahrenheit. Grease your baking dish with butter or non-stick spray.
  • Drain the pineapple tidbits over a small bowl. Save three tablespoons of the juice for later use.
  • Whisk the sugar and flour in a large bowl. Add the pineapple, juice, and cheese to this mix.
  • Stir the mixture gently until everything is well combined. Spread the pineapple mixture into your prepared baking dish.
  • Crush the buttery crackers into medium-sized crumbs. Toss the crumbs with the melted butter in a bowl.
  • Sprinkle the buttered crumbs over the top of the pineapple. Ensure the crackers cover the entire surface of the dish.
  • Bake the casserole for thirty minutes until golden brown. The cheese should be bubbly around the edges.

Notes

  • Drain the pineapple well so the dish is not soggy.
  • Use sharp cheddar for the best flavor contrast.
  • Do not over-crush the crackers into a fine powder.
  • Serve the dish warm for the best gooey texture.
  • Add a pinch of salt to balance the sugar.
  • Try using fresh pineapple for a more tart flavor.
