Ingredients
  

  • 1 kg chicken pieces legs or wings
  • 2 tbsp Piri Piri sauce or paste
  • 1 tsp salt
  • 1 tsp red chili powder
  • 1 tsp garlic powder
  • 1 tsp paprika
  • ½ cup buttermilk or yogurt
  • 1 cup flour
  • Oil for frying

Instructions
 

Marinate the Chicken

  • In a bowl, mix Piri Piri sauce, salt, chili, garlic, paprika, and buttermilk. Add chicken pieces and coat them well. Cover and keep for at least 1 hour. For added flavour, marinate overnight in the refrigerator.

Prepare for Frying

  • Take the marinated chicken out of the fridge. In another bowl, add flour. Roll each chicken piece in flour to coat it nicely. Shake off extra flour.

Heat the Oil

  • Pour oil into a deep frying pan. Heat it on medium flame. Test with a small piece of chicken. If it sizzles, oil is ready.

Fry the Chicken

  • Add the coated chicken pieces into the oil carefully. Don’t overcrowd the pan. Fry until golden brown and crispy. It takes about 10–12 minutes per batch.

Drain and Serve

  • Remove chicken with tongs. Place on paper towels to remove extra oil. Serve hot with fries or coleslaw.

Notes

  • Marinate longer for more flavor.
  • Use fresh oil for crispiness.
  • Don’t fry on high heat. It can burn the coating.
  • Add extra Piri Piri sauce if you love spice.
  • Serve hot for the best taste.
