Ingredients
  

  • Pork stomach cleaned, bite-sized pieces = 2 lbs
  • Green bananas peeled, sliced = 2
  • Green plantains peeled, sliced = 2
  • Yam peeled, diced = 1
  • Onion finely chopped = 1
  • Garlic minced = 4 cloves
  • Bay leaves = 2
  • Oregano = 1 tablespoon
  • Annatto achiote oil = 1 tablespoon
  • Salt = To taste
  • Pepper = To taste
  • Water for boiling = As needed

Instructions
 

  • Bring water to a boil in a large pot.
  • Add pork stomach and boil for 10 minutes.
  • Discard the water to remove impurities.
  • Refill the pot with fresh water.
  • Add pork stomach, bananas, plantains, and yam.
  • Add onion, garlic, bay leaves, and oregano.
  • Season with salt, pepper, and annatto oil.
  • Bring to a simmer and cover the pot.
  • Cook for 1.5 to 2 hours until tender.
  • Check seasoning and adjust as needed before serving.

Notes

  • Cook the meat thoroughly over low heat.
  • Adjust the spices to your taste.
  • Let the dish rest for a while after cooking.
  • You can also add vegetables to it.
