Ingredients
  

  • 2 lbs beef sirloin cut into bite-sized pieces
  • 2 lbs baby potatoes halved
  • 6 cloves garlic minced
  • 1/2 cup butter melted
  • 1 packet onion soup mix
  • 1 cup beef broth
  • 2 tbsp olive oil
  • 1 tsp dried thyme
  • 1 tsp black pepper
  • 1/2 tsp salt
  • 2 tbsp fresh parsley chopped

Instructions
 

  • Cut beef into small, even pieces.
  • Wash and halve the baby potatoes.
  • Mix melted butter with minced garlic.
  • Add onion soup mix to butter mixture.
  • Place beef pieces in slow cooker.
  • Add halved potatoes around beef.
  • Pour garlic butter mixture over everything.
  • Add beef broth and seasonings.
  • Stir gently to coat ingredients.
  • Cook on low for 6 hours.
  • Check tenderness after 5 hours.
  • Garnish with fresh parsley before serving.
