Ingredients
  

  • 3 lbs chicken pieces cut up
  • 2 cups buttermilk
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 2 cups all-purpose flour
  • 1 tbsp paprika
  • 2 tsp garlic powder
  • 2 tsp onion powder
  • 1 tsp cayenne pepper
  • 1 tsp dried thyme
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 4 cups vegetable oil

Instructions
 

  • Mix buttermilk with salt and pepper.
  • Soak chicken pieces for 2 hours minimum.
  • Combine all dry coating ingredients thoroughly.
  • Heat oil to 350°F in skillet.
  • Remove chicken from buttermilk completely.
  • Coat each piece in seasoned flour.
  • Shake off excess flour gently.
  • Fry chicken pieces for 15-18 minutes.
  • Turn pieces once during cooking time.
  • Check internal temperature reaches 165°F.
  • Drain on wire rack immediately.
  • Let rest 5 minutes before serving.
