Ingredients
  

  • 1 cup yellow cornmeal
  • 1 cup all-purpose flour
  • 1/4 cup granulated sugar
  • 1 tablespoon baking powder
  • 1 teaspoon salt
  • 1 cup buttermilk
  • 2 large eggs
  • 1/3 cup melted butter
  • 1/4 cup honey
  • 1/4 cup butter
  • 3 tablespoons honey
  • Pinch of salt

Instructions
 

  • Preheat oven to 400°F.
  • Spray mini muffin tin with cooking spray.
  • Mix cornmeal, flour, sugar, baking powder, salt together.
  • Whisk buttermilk, eggs, melted butter, honey separately.
  • Pour wet ingredients into dry ingredients.
  • Stir until just combined.
  • Fill muffin cups 3/4 full with batter.
  • Bake for 10-12 minutes until golden.
  • Make glaze by melting butter with honey.
  • Brush warm poppers with honey butter glaze.
