Ingredients
  

  • 12 lasagna noodles
  • 2 cups fresh spinach chopped
  • 15 oz ricotta cheese
  • 1 cup mozzarella cheese shredded
  • 1/2 cup parmesan cheese grated
  • 2 cups marinara sauce
  • 2 large eggs
  • 2 cloves garlic minced
  • 1 tsp Italian seasoning
  • Salt and pepper to taste

Instructions
 

  • Preheat oven to 375°F degrees.
  • Boil lasagna noodles until al dente.
  • Drain noodles and set aside.
  • Sauté spinach with garlic until wilted.
  • Mix ricotta, eggs, and seasonings together.
  • Add cooked spinach to ricotta mixture.
  • Spread sauce in baking dish bottom.
  • Layer noodles over the sauce.
  • Add half the ricotta-spinach mixture.
  • Sprinkle mozzarella cheese over ricotta.
  • Repeat layers ending with cheese.
  • Cover with foil and bake 30 minutes.
  • Remove foil and bake 15 more minutes.
  • Let rest 10 minutes before serving.

Notes

  1. Use fresh spinach for better flavor and texture
  2. Don't overcook noodles - they continue cooking while baking
  3. Drain spinach well to prevent watery lasagna
  4. Let lasagna rest before cutting for cleaner slices
  5. Cover edges with foil if browning too quickly
