- 1.5 cups Flour
- 1 cup Sugar
- 3 Eggs
- 1/2 cup Sour Cream
- 1/2 cup Vegetable Oil
- 1 tbsp Lemon Zest
- 2 tsp Lemon Extract
- 1/2 tsp Baking Powder
- 1/2 tsp Baking Soda
- 1/2 tsp Salt
- 1 cup Powdered Sugar
- 2 tbsp Lemon Juice
- 2 tbsp Melted Butter
Start by heating your oven to 350°F. Line your loaf pan with some parchment paper.
Whisk the flour, baking powder, and salt together well. Set this dry mixture aside for a few minutes.
Rub the lemon zest into the sugar with fingers. This releases the natural oils for better flavor.
Beat the eggs and sugar until the mix is pale. Add the sour cream, oil, butter, and extracts.
Slowly add the dry ingredients into the wet ones. Mix until the batter is just smooth and yellow.
Pour the yellow batter into your prepared loaf pan. Bake for about 50 to 60 minutes until golden.
Let the cake sit in the pan for 10 minutes. Then move it to a wire rack to cool completely.
Whisk powdered sugar and lemon juice for the glaze. Pour it over the cool cake and let set.
➔ Use room temperature eggs for a much smoother batter.
➔ Do not overmix the batter to keep it very soft.
➔ Use fresh lemons instead of bottled juice for better taste.
➔ Grease the pan well even if using parchment paper.
➔ Measure your flour correctly by using a kitchen scale.
➔ Let the cake cool fully before adding the glaze.
➔ Tap the pan on the counter to remove air bubbles.
➔ Wrap the loaf in plastic to keep it moist overnight.
