Peel the garlic and rinse with cold water.
Boil water in a pot and add the garlic for one minute.
Drain the garlic and let it cool.
In a pot, heat rice vinegar, soy sauce, sugar, and salt.
Stir until the sugar melts.
Remove from heat and let it cool a little.
Put garlic in a clean glass jar.
Pour the pickling liquid over the garlic.
Add chili flakes if you like spicy food.
Close the jar tightly and put it in the fridge.
Let it sit for at least one week before eating.
