Ingredients
  

  • 2 cups mixed dried fruits raisins, currants, cherries
  • 1 cup chopped dates
  • 1/2 cup orange juice
  • 1/2 cup butter softened
  • 3/4 cup brown sugar
  • 3 eggs
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/4 teaspoon salt
  • 1/2 cup chopped walnuts
  • 2 tablespoons rum or brandy optional

Instructions
 

  • Put dried fruits in a bowl.
  • Pour orange juice over them.
  • Cover and let sit overnight.
  • This makes fruits soft and juicy.
  • You can add rum here too.
  • Preheat oven to 300°F (150°C).
  • Line your cake pan with parchment paper.
  • Grease it well with butter.
  • This prevents sticking later.
  • Cream butter and sugar until fluffy.
  • Add eggs one at a time.
  • Beat well after each egg.
  • Mix in the soaked fruits.
  • Mix flour, baking powder, and spices.
  • Add salt to the mixture.
  • Stir everything together well.
  • Add dry ingredients to wet mixture.
  • Fold gently until just combined.
  • Don't overmix the batter.
  • Add chopped walnuts last.
  • Pour batter into prepared pan.
  • Smooth the top with a spoon.
  • Bake for 90 minutes.

  • Let cake cool in pan.
