Course Main Dish

Equipment

  • Large mixing bowl
  • Frying pan or skillet
  • Wooden spoon for stirring
  • Measuring cups and spoons
  • Baking sheet

Ingredients

  • 2 cups cooked lentils or chickpeas
  • 1 cup breadcrumbs for binding
  • 1 small onion finely chopped
  • 2 cloves garlic minced fresh
  • 1 egg or flax egg
  • 1 teaspoon soy sauce for flavor
  • Salt and pepper to taste
  • 2 tablespoons olive oil for frying
  • 2 tablespoons butter or vegan butter
  • 2 tablespoons all-purpose flour
  • 2 cups vegetable broth
  • 1/2 cup heavy cream or coconut cream
  • 1 teaspoon Dijon mustard
  • Salt and pepper to taste

Instructions

  • Mash your lentils or chickpeas in a bowl.
  • Don't make them completely smooth.
  • Leave some texture for better meatballs.
  • Add breadcrumbs, onion, and garlic to the bowl.
  • Mix in the egg and soy sauce.
  • Season with salt and pepper generously.
  • The mixture should stick together when pressed.
  • Take small portions of the mixture in hand.
  • Roll them into round balls, about walnut-sized.
  • Make them all the same size.
  • This helps them cook evenly together.
  • You should get about 20 meatballs total.
  • Heat olive oil in your frying pan.
  • Place meatballs in the hot oil carefully.
  • Cook for 3 minutes on each side.
  • They should turn golden brown all over.
  • Remove them and set aside on a plate.
  • Use the same pan for the sauce.
  • Melt butter over medium heat slowly.
  • Add flour and whisk for one minute.
  • Pour in vegetable broth while stirring constantly.
  • Add cream and mustard to the mixture.
  • Let it simmer until sauce thickens nicely.
  • Add meatballs back to the creamy sauce.
  • Let them simmer for 5 minutes together.
  • This helps flavors blend perfectly together.
  • Serve hot with your favorite side dish.

Notes

  • Don't skip mashing the lentils or chickpeas.
  • This step helps bind everything together properly.
  • Wet your hands when rolling the meatballs.
  • This prevents the mixture from sticking badly.
  • Cook meatballs on medium heat, not high.
  • High heat burns them before cooking inside.
  • Taste your sauce before adding the meatballs.
  • Adjust seasoning if needed for better flavor.
  • Let the dish rest for 5 minutes.
  • This makes the flavors come together beautifully.
  • You can freeze uncooked meatballs for later.
  • They last up to 3 months frozen.
  • Double the sauce recipe if you like.
  • Extra sauce is never a bad thing!
