- 8 pieces of chicken legs, thighs, or breasts
- 2 cups buttermilk
- 2 eggs
- 2 cups all-purpose flour
- 1 tablespoon cornstarch
- 1 teaspoon baking powder
- 1 teaspoon paprika
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon salt
- ½ teaspoon black pepper
- Vegetable oil for frying
Wash and dry the chicken.
Mix buttermilk and eggs in a bowl.
Put chicken in the bowl. Cover and keep in the fridge overnight.
In another bowl, mix all the dry ingredients.
Heat the oil to 350°F (about medium-high heat).
Take chicken out of the fridge.
Roll each piece in the dry mix.
Shake off extra flour.
Put chicken in hot oil carefully.
Fry each piece for 10–12 minutes per side.
Use a thermometer to check it’s 165°F inside.
Take out and place on paper towels.
Let the chicken rest for 5 minutes.
