  • Measuring spoons
  • Plastic bags or a container
  • Dehydrator or oven
  • Wire rack
  • Baking tray
  • Paper towels

Ingredients
  

  • 2 pounds of lean beef like top round
  • 1/2 cup soy sauce
  • 1/4 cup Worcestershire sauce
  • 1 tablespoon brown sugar
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1 teaspoon black pepper
  • 1 teaspoon red pepper flakes optional
  • 1/2 teaspoon liquid smoke

Instructions
 

  • Cut the beef thin across the grain.
  • Mix all sauces and spices in a bowl.
  • Add beef slices to the bowl and mix well.
  • Cover and let it sit in the fridge overnight.
  • Heat oven or dehydrator to 160°F.
  • Dry the beef with paper towels.
  • Put the slices on a rack or tray.
  • Cook for 4 to 6 hours.
  • The beef should be dry but bendy.
  • Let it cool before storing in bags.

Notes

  • Use meat with little or no fat.
  • Put meat in freezer for 30 mins—it cuts easier.
  • Dry meat slices before cooking.
  • Keep jerky in airtight bags or containers.
  • Want it spicier? Add more red pepper!
