Ingredients
  

  • 1 lb chicken breast cut into strips
  • 2 tbsp coconut milk
  • 1 tbsp soy sauce
  • 1 tsp curry powder
  • 2 cloves garlic minced
  • 1 tsp brown sugar
  • ½ cup peanut butter
  • ¼ cup coconut milk
  • 2 tbsp soy sauce
  • 1 tbsp lime juice
  • 1 tsp chili flakes
  • 1 tsp brown sugar

Instructions
 

  • Cut chicken breast into thin strips.
  • Mix coconut milk, soy sauce, curry powder together.
  • Add minced garlic and brown sugar to mixture.
  • Marinate chicken strips for 15 minutes minimum.
  • Thread marinated chicken onto soaked wooden skewers.
  • Heat grill or grill pan to medium-high.
  • Cook skewers 3-4 minutes per side.
  • Meanwhile, combine all peanut sauce ingredients.
  • Heat sauce in small pan until smooth.
  • Serve hot chicken with warm peanut sauce.
