Ingredients
  

  • 4 cups cooked chicken shredded.
  • 1 cup uncooked wild rice blend.
  • 2 tablespoons olive oil.
  • 4 tablespoons unsalted butter.
  • 2 cups chopped yellow onions.
  • 2 cups chopped carrots.
  • 2 cups chopped celery.
  • 8 cups high-quality chicken stock.
  • 1 teaspoon dried thyme.
  • 1 teaspoon kosher salt.
  • 1/2 teaspoon black pepper.
  • 1 cup heavy cream.
  • 1/2 cup dry white wine.
  • 2 tablespoons fresh parsley chopped.

Instructions
 

Cook the Wild Rice

  • First, cook the wild rice in a separate pot. Follow the package directions for the best rice. Drain any extra water and set it aside.

Sauté the Vegetables

  • Heat oil and butter in your large pot. Add the onions, carrots, and celery. Cook them over medium heat for ten minutes. The vegetables should be soft and very fragrant.

Add Spices and Wine

  • Stir in the salt, pepper, and dried thyme. Pour in the dry white wine. Let it simmer for two minutes. This adds a deep flavor to the base.

Pour the Chicken Stock

  • Add the 8 cups of chicken stock now. Bring the liquid to a quick boil. Then, turn the heat down to low. Let it simmer for twenty minutes.

Add Chicken and Rice

  • Add the shredded chicken to the pot. Stir in the cooked wild rice. Let everything heat through for five minutes. The soup will start to look very thick.

Finish with Cream

  • Turn the heat to very low. Slowly pour in the heavy cream. Stir gently to mix it well. Do not let the soup boil now.

Garnish and Serve

  • Taste the soup for salt and pepper. Add the fresh parsley at the very end. Serve it hot in large soup bowls.

  • Use a Rotisserie Chicken: This saves a lot of time.
  • Don't Overcook Rice: Keep the rice slightly firm.
