Ingredients

  • 3 tablespoons of good olive oil.
  • 2 cups of diced bread cubes.
  • 3 pounds of plum tomatoes.
  • 2 tablespoons of minced garlic.
  • 1/2 cup of granulated sugar.
  • 2 teaspoons of kosher salt.
  • 1 teaspoon of black pepper.
  • 1/2 cup of fresh basil leaves.
  • 1/2 cup of grated Parmesan cheese.

Instructions

Prep the Bread Cubes

  • Cut your bread into small 1-inch cubes. Heat olive oil in your sauté pan. Add the bread cubes to the pan. Toast them until they are golden brown. This adds a great crunch. Set the toasted cubes aside for later.

Prepare the Plum Tomatoes

  • Wash your plum tomatoes very well. Cut them into 1-inch chunks. Do not remove the seeds or skin. The juices are very important for flavor. Put the tomatoes in a big bowl.

Sauté the Garlic

  • Use the same pan for the garlic. Add a little more olive oil. Cook the garlic for one minute. Do not let the garlic burn. It should smell very sweet and nice.

Mix the Tomato Base

  • Add the tomatoes to the sauté pan. Stir in the sugar and salt. Add the black pepper as well. Let it simmer for five minutes. The tomatoes will start to break down.

Add the Fresh Basil

  • Tear the fresh basil into small pieces. Stir the basil into the tomato mixture. This adds a very fresh herbal scent. It makes the dish taste like Italy.

Combine Bread and Tomatoes

  • Turn off the heat on the stove. Stir in the toasted bread cubes. The bread will soak up the juice. It creates a thick and hearty texture.

Bake the Dish

  • Pour the mix into a baking dish. Sprinkle Parmesan cheese over the top. Bake at 350 degrees for 40 minutes. The top should be brown and bubbly.
