- 2 pounds Yukon Gold potatoes peeled
- 3 tablespoons melted butter
- 2 tablespoons olive oil
- 1 teaspoon salt
- ½ teaspoon black pepper
- 1 teaspoon fresh thyme optional
- 2 garlic cloves minced
- ¼ cup grated Parmesan cheese optional
Turn on oven to 400°F.
Slice potatoes very thin.
Mix potatoes with garlic, salt, pepper, and thyme.
Heat the pan on the stove.
Add half the butter and oil.
Place potatoes in the pan in a circle.
Brush the top with more butter and oil.
Press down gently with a spatula.
Cook for 10 minutes on the stove.
Sprinkle Parmesan cheese on top.
Put the pan in the oven.
Bake for 25–30 minutes until golden.
Let it sit 5 minutes before cutting.
