  • Mixing bowls

  • Rubber spatula

  • Small saucepan

  • Wire rack
  • Blender (if you want to puree fruit)

Ingredients
  

  • 1 ½ cups graham cracker crumbs
  • ¼ cup sugar
  • ½ cup melted butter
  • 24 oz soft cream cheese
  • 1 cup sugar
  • 1 teaspoon vanilla
  • 3 eggs
  • ½ cup sour cream
  • ½ cup heavy cream
  • 1 cup sliced peaches
  • 1 cup mixed berries like strawberries, blueberries, raspberries
  • 2 tablespoons sugar
  • 1 teaspoon lemon juice

Instructions
 

  • Heat oven to 325°F.
  • Mix cracker crumbs, sugar, and butter.
  • Press into pan. Bake for 10 minutes.
  • Let it cool.
  • Beat cream cheese until smooth.
  • Add sugar and vanilla. Mix again.
  • Add eggs one by one. Mix each time.
  • Add sour cream and heavy cream. Stir well.
  • Pour mix into crust.
  • Bake for 50–55 minutes.
  • Turn off oven. Let it sit for 1 hour.
  • Take it out. Let it cool.
  • Put it in fridge for 4 hours or overnight.
  • Cook fruit, sugar, and lemon in a pan.
  • Let it simmer until soft and thick. Cool it.
  • Add fruit mix on top of cheesecake.

Notes

  1. Use fresh, soft peaches for best taste.
  2. Let cream cheese get soft before mixing.
  3. Don’t mix too much after adding eggs.
  4. Cool it in the fridge overnight.
  5. Use a warm knife to slice neatly.
