- Whole milk = 1 cup
- Cheddar cheese grated = 1½ cups
- Monterey Jack cheese grated = 1 cup
- Green chilies chopped = 4 oz.
- Tomato diced = 1 medium
- Onion finely chopped = ¼ cup
- Cumin = ½ tsp
- Garlic powder = ½ tsp
- Salt = To taste
- Fresh cilantro chopped, for garnish = As needed
Melt butter in a saucepan over medium heat.
Add flour and stir until smooth.
Slowly pour in milk, whisking constantly.
Cook until the mixture thickens, about 5 minutes.
Reduce heat to low and add grated cheddar cheese.
Add Monterey Jack cheese and stir until melted.
Mix in green chilies, tomato, and onion.
Add cumin, garlic powder, and salt. Stir well.
Simmer on low heat for 10 minutes, stirring occasionally.
Pour queso into a serving bowl.
